Position Description
The Bakery Manager (BM) manages, directs and reports daily operations and sales at the bakery. S/he is responsible for meeting the mission, vision, and strategic goals of the bakery, by leading and managing a group of bakers, sales agents, and cleaner.
Expectations
This is a full time, minimum 45 hour per week salaried position based in Rwanda. Under the direction of a Regional Manager, the BM works with the team to achieve the objectives and goals of TWB’s Strategic Plan. The BM will collaborate with Bakery Managers, Regional Managers, and the Director of Operations to achieve production and sales goals. Some weekend and evening work may be required.
Roles and Responsibilities:
Finances
• Monitor, track, and report on the bakery and café operating budget to ensure sales, expense and sales revenue targets are met through the completion of:
• Daily reconciliation of revenue and expenses, proper invoice/receipt documentation, sales deposits, proper EBM receipts, and monthly cash flow reconciliation with finance team members
• Weekly/monthly KPIs recording and reporting
• Manage profit margins of each bread product sold
• Completion of quarterly wire requests
Production
• Effective people, equipment, recipe, and inventory management
• Supervise bakers, housekeeper/cleaner ,and sales agents
• Each woman baker must be producing a minimum 25-32 kgs in a 6 hour shift
• Workflows efficiency management though production and work schedules based on sales projections
• Oversight of daily sanitation protocols and regular equipment maintenance
• Clear adherence to TWB recipes, gram sizes, and quality control
• Manage inventory schedule for bulk purchasing of raw materials and packaging
• Clear and concise record keeping of inventory, production, and sales
• Work with Social Impact Department to schedule programming to benefit Strong Women Bakers
Sales
• Responsible for meeting daily sales goals/projections via on brand marketing
• In partnership with the Regional Manager/DO, develop a detailed sales plan which achieves month over month, quarter over quarter, and annual revenue projections for bakery
• Track and analyze monthly sales and marketing statistics (bread products sold)
• Monitor competitors and market for developing sales plans and strategies
• Acquire new customers in collaboration with sales agents
• Create and monitor the sales agents’ schedules, sales routes, and shifts
• Uphold on brand marketing and communications to customers and clients

Required Competencies and Qualifications:
• TWB baking certification, and/or 2-3 years relevant experience in baking, business, hospitality management, customer service, or another applicable area
• Clear comprehension of baking skills and techniques
• Stronghold on bakery equipment function and maintenance
• Effective communication and strong customer services skills
• Adept email, excel and record keeping competencies
• Explicit sales and marketing acumen
• Experience in financial processes and reporting
• Demonstrated ability to effectively work with employees, team members, customers, and clients
• Comprehension of TWB tools and processes (training will be provided)
• Advanced Proficiency in English and Kinyarwanda
